Home Again

Well I made it back to surprisingly sunny Seattle! It was a long day of travel and I'm glad it's over. I'm going to miss being on vacation and hanging out with my sister, though I am ready to get back in gear with clean eating!

This morning started off with a very abnormal breakfast: an old fashioned doughnut and a cup of coffee! The taste of the doughnut brought me back to my childhood. Since Win and I were both three years old my father always took us antelope hunting on the rolling plains of Montana every October. No we didn't hunt but we enjoyed the experience of waking up in the back of his Trooper, abandoned in the middle of nowhere, with a box of old fashioned doughnuts and a thermos full of hot cocoa. We'd watch the sun come up tucked in our sleeping bags, enjoy our “nutritious” breakfast, and wonder if my dad and his friends had shot anything yet. Ah, good times.

While we reminisced about old times while savouring our breakfast, we drove the long trip back to LA where my flight was leaving from at 5pm. It's a good thing we left early because man was traffic bad!

We arrived near the airport around 2pm and decided we had time for a little lunch. Almost every restaurant was either closed or packed with hour long waits. >.< Luckily, we found a Mexican place, Paco's Tacos, with space. Yes I'm in love with Mexican food now. We munched on tortilla chips with salsa just for a moment though because our food arrived super fast! I just got the simpliest thing I could find: bean and cheese burrito. I forgot that more traditional Mexican doesn't come with veggies inside it so Win gave me a little lettuce and tomato from her toastada. Even minus the veggies though, this burrito was freaking delicious. I ate the entire thing.

I got into Sea-Tac a little after 7pm but didn't get home until 9. Traffic is just bad everywhere today apparently. With all the eating out I've done over the past week I only wanted one thing: fresh fruit. I ended up cutting up apples, bananas, orange, strawberries, and banana and mixing it with plain nonfat yogurt and topping it with raisins and raw almonds. MMM fruit salad. After my fruit I needed just a little salt so I had a string cheese.

It feels good to be back home! I think the babies have almost forgive me already. Tomorrow they will be all mine. ~.^ Night!

Adventure Day

Today turned out really adventure filled.

It started bright and early with Win making us egg white veggie scrambles in small whole wheat tortillas. Plus a banana! (I'm in love with them) And followed by a Mexican Mocha on the road for an hour drive east of San Diego.

Off the Sunrise Highway we found amazing hiking trails! My foot is still really messed up from yesterday but getting it moving actually helped the pain subside.

It was an absolutely gorgeous day!

We had fun chatting and taking silly photos.

Plus the traditional “Lets try to fit our giant heads in the photo and still have some background”!

After our hike, we headed to the nearby small town of Julian where we had crisp and clean veggie wraps (half each) and split slices of pie! This town is famous for pies. We shared an apple peach crumb slice and an apple mountain berry crumb one. Perfection. Normally I find pies too sweet but these ones were just right.

On our drive back to San Diego, we got sidetracked by the Viejas Resort and Casino! Normally not gamblers, we didn't really know what we were doing…

But somehow I managed to turn my $20 into $29.66!! Victory! We quickly cashed out and ran…and didn't get very far! I ended up spending it (plus more) on a new pair of flats that have Dr. Scholl's inserts built-in. My feet felt 100x better in them.

When we got back to Win's apartment we worked on her thesis for awhile before cooking up dinner. An encore of roasted Brussels sprouts with a peanut mustard sauce and the other half of our veggie wraps. Plus some more wine!

Last time I was in San Diego Win and I got delectable desserts at a place called Extraordinary Desserts. They were soo memorable, we knew we had to go there again. This time we split a Macadamium Shortbread Cookie…

And a Strawberry Coffee Cake! Wow am I full now.

Icing my foot right now. =( Hopefully I'll be able to be more active tomorrow. I feel like I'm really letting us down!

 

Roaring to Go

Well I made it to California! Here's a quick recap of yesterday before I start today's festivities.

Breakfast was Weetabix, toasted walnuts, and a plethora of thawed berries. I got this antioxidant blend at Costco and it just rocks my socks.

After training another volunteer at the hospital, I walked the 2 miles to work as fast as I could since we had a busy day ahead!

Someone Up There Hates Me

Sorry this is a day late but yesterday was really rough. I feel like I tell you all that more often than not but seriously, yesterday was mean. I woke up at 5am in pain and hardly able to move. I had tried out one of Chase’s new pillows (you know the ones that have that supportive neck shape) and it had completely put my neck at an odd angle.

I put some heat on it, took some ibuprofen, cried a bit, and managed to fall back asleep for a few hours. I skipped my hospital shift because there was no way I could even lift a food tray with my right arm. My trapezius apparently got it good. Not only could I not move my head to the right but I couldn’t abduct (lift) my right arm either. Let me tell you, showering and trying to put makeup on and do my hair was a joke.

Pretty upset that this should happen to me right before finals, I made myself a bowl of Weetabix with blueberries and TJ’s Nuts About Raspberries Trek Mix. I needed chocolate this morning. Sadly, yet again my favorite trail mix has proven that it tastes best on it’s own!

A Good Day To…

30-Day Spring Break-Ready Challenge Day 1: Success!

Just gonna keep track of me sticking to my challenge since I don’t know if I’ve stuck to it until after I’ve posted and gone to bed. That said, last night I went to bed feeling good and woke up feeling even better! Before I know it I’ll be waking up hungry again. Such a great feeling, in my opinion.

I practiced mindful eating this morning while I enjoyed my strawberry overnight oats topped with a spoonful of sunflower seed butter and craisins. I really paid attention to the texture: the burst of the chia seeds, the chew of the dried fruit, and the creaminess of the oats. To be honest though, I was pretty bored! I kept finding my eyes wandering to things on my desk or wall so I’d have something to read and I had to actively remind myself to pay attention to the food. Hopefully it only gets easier.

Not Enough

Yikes. My hunger was a bit ravenous today…

It started off fine. I climbed out of bed, again exhausted, and, like a zombie, ate my strawberry overnight oats with a spoonful of crunchy cookie butter, the last of the golden raisins, and a sprinkle of dry roasted unsalted peanuts.

Then I was over at the hospital again to pass out trays. Man do I look forward to sleeping in tomorrow. This early morning volunteering is getting tiring! I emailed in today to ask how many hours I’ve accumulated so I can figure out how much longer I have to keep doing it. =P

Oh What a Beautiful Day

My goodness I was tired this morning. Honestly, I haven’t felt that tired after a night of sleep in awhile.

I managed to take this pretty awfully lit photo of my breakfast though (overnight oats with mixed berries, sunflower seed butter, and golden raisins) before I headed out the door to the hospital for another round of delivering trays.

When I got back home around 9am, I slipped right back into bed and passed out until 11:30am! O Chase couldn’t believe how long I slept! I guess I really needed it?

Relief

Today was very…relieving.

I was up early and eating my breakfast of strawberry overnight oats topped with a spoonful of cookie butter (holy yum with strawberry), golden raisins, and a pinch of toasted almonds. Loved the crunch!

At school I skipped out of my Writing about Food & Health class (after turning in two papers) to go do my A&P lab practical. We (meaning my lab section) had a special time set up to do it so we wouldn’t have it on the same day as our biochem exam (tomorrow). The practical went well, I think. It was clear and concise. I just wish I’d studied the nerves better! I’m so glad I decided to take it early so I can just concentrate on one set of notes tonight. What a relief!
