Today was pretty darn jam packed with information! And I started out running…no really I did! I woke up bright and early and got in my 30 minute interval treadmill workout without even eating breakfast!
Then I was off to my new bus stop where I nervously waited for the bus. Low and behold, it arrived only 5 minutes late and I made it to school just fine. ^_^ Phew! Buses give me so much stress.
Now I didn’t eat breakfast because there was a breakfast at school hosted by the President…only he wasn’t there! So instead we all sat around eating awkwardly. Okay…maybe it was just me on the awkward part. The friend I made yesterday wasn’t there and I was just too hungry to try and be friendly. The breakfast was a little disappointing too. I should have just eaten my overnight oats at home.
Fruit: cantaloupe, honey dew, grapes, strawberries, and a small spelt flour almond cranberry scone. Plus one of the best cups of coffee I’ve had in awhile. ^_^ With a little bit of half and half and Stevia. (They awesomely had soy milk and rice milk too!)
Then we had our welcome to Bastyr lecture in the chapel. Psst, it felt kind of like Hogwarts. Don’t you see it? This is where I made a new friend too. Yay!
After the welcome, I went out on my own to snoop around the campus and get some pictures requested by my mother. ~.^
I even found the Student Fitness Center! Don’t see me ever using this since I get soo sweaty, but it’s nice to know there is one. I got totally lost in the basement after finding this though. In fact, I don’t know if I could find it again!
Eventually, I got free of the basement (the only way I found back up to where I wanted to be was on the elevator), I found my new friend and made another while we had lunch. The school lunches look absolutely amazing (they have a ton of vegetarian, even vegan options), but to save money I’ll probably keep packing my own. It’s nice to know though that if I forget it one day I’ll get a real treat!
Since I had pretty much nothing prepared, I threw together this lackluster lunch last night. Salad of lettuce (sadly my lettuce is dying super fast…) tomato, red onion, golden raisins, and lime vinaigrette. For protein I had two egg muffins and for some filling carbs a Flatout stuffed with the last of my cheddar cheese. It didn’t taste good, but I was so hungry from my tiny breakfast I ate it all up.
After hours of information sessions and awful ID photo taking, we had our Nutrition department “tea” (where we had no tea) to get to know each other. They had a plethora of refreshments like fresh veggies, chips, salsas, dips, ect. but I wasn’t that hungry. =/ All I really wanted was one of these tiny cookies but I felt kind of off so I knew it could have been that my body was really hungry so I grabbed some cucumber, nuts, and really strong lemonade to go along with the cookie.
Eventually, orientation was officially over and I managed to get on the wrong bus and head away from home before I could head back. >.< I ALWAYS do this my first time on a new route.
Anyway I got home around 5pm absolutely famished. I quickly made myself a 1/2 cup of Greek yogurt topped with raspberry jam and a spoonful of sunflower seed butter. Delicious! I enjoyed this snack while I skimmed through one of my books just arrived from Amazon. Super interesting!
Dinner after 6:30pm was some TJ’s Harvest Grains, Quorn “chicken” nuggets drizzled with honey, and some roasted veggies: onion, sweet peppers, and tomatoes. Yum yum. As you can tell I’m running low on veggies, but luckily my CSA arrives on Friday!
Anyway, I’m super excited for school to start and am so happy to be at Bastyr.
