Thanks for all the lovely well wishes! They worked! I awoke this morning not feeling at all sick. Phew! I was pretty worried.
I’d made a big pot of oatmeal last night so on these early mornings all I have to do is reheat a bowl in the microwave and top it with fixin’s. Today I went with a spoonful of TJ’s Lemon Curd, craisins, and toasted almonds. Mmmmm mmm. I love lemon. It reminded me of a cranberry lemon scone!
Since I was feeling well enough I walked the 1.5 miles to work in the rain. We were so freaking busy this morning! Seriously. Non-stop taking orders and making drinks.
I finally got my break just an hour before I was to leave. I really felt like I needed something to fill me so I ordered a tall iced coffee and added some half and half to it. ^_^ I only drank about half and dumped the rest, saving the cup! It was grocery day so I knew Chase and I would be back to Safeway later and I could then refill it for free! (I did btw and subbed Caramel syrup for the Classic.)
After my walk home, I munched on a banana and PB to hold me over until lunch.
Lunch was a simple reheating of my simple veggie and rice soup plus I added a Quorn chic’kn cutlet in and topped it with shaved parmesan. To be honest, this was super filling! I couldn’t even finish the bowl.

Oddly enough, 20 minutes later my tummy had space for a sweet. It was craving cookies but since we have none I made due with a toasted English muffin slathered with Cookie Butter and a glass of skim milk. God I’m liking this cookie butter way too much. It is by no means a health food and I will have to restrain myself from buying another jar!
Like I said earlier, it was finally grocery day! Once I got home from class Chase and I hit up Costco, Trader Joe’s, and Safeway. I grabbed these MultiVites at Costco because I am determined to work on getting in all my vitamins. Normally I 100% believe one can get all the vitamins they need through eating real food, but my low iron levels really failed me. So I’m trying another route. No this one doesn’t have iron in it but it’s got vitamin C which helps with iron absorption!
I ate my daily dose of 2 of these gummies in the car and they were yummy!
After all that shopping, I got straight in the kitchen and made an amazing dinner.
Remember my recent Italian obsession? Well it’s going to show in my food since all the recipes I picked out to make this month are Italian! Tonight I made this amazing simple panzanella salad, cutting the oil in the recipe in half however.
I enjoyed it on top of a bed of fresh spinach (iron!) and oh boy was it out of this world! Can’t wait for leftovers.
Around 8pm I laced up my shoes and hit the gym for an entire hour of Hill stationary biking. Nice and sweaty, I felt like my day was complete.
For dessert (and to help my muscles recover), I had a banana and peanut butter. ^_^ I seriously could eat…probably 10 of these in one day!
Anyway I have a full shift tomorrow (my first one ever!) and it’s still an early one. >.< Have a goodnight everyone!
